"sweated" initially to promote necessary chemical
changes and then dries in sun. Cured in 14-21 days. Cured
product varies from greenish-yellow to brown.
Environment: Requires
shallow, relatively infertile, light soil to stunt growth
and so produce small leaves with concentrated aroma and taste.
Hot, dry climate to further accentuate development of desired
quality characteristics.
